This is our production’s mythic vintage. Made from the grapes of our finest vineyards, it pays homage to Saint Valentine, whose relics are preserved in the nearby collegiate church of Roquemaure: they were brought from Italy in the 19th century against phylloxera.
Assemblage
The richness of 40% Grenache, the intensity of 40% Syrah and the robustness of Mourvèdre combine to give this exquisite wine.
Terroir
This wine gives the deepest expression to our appellation’s terroir. The vines are on average more than forty years old. They grow on argillocalcareous hillsides topped by big rolled pebbles.
Vinification
The grapes are carefully selected, maceration lasts a full three weeks, with temperature control. Elevage is in vats on the fine lees. Part of the vintage (50 to 60%) matures in barrels for nine months.
Dégustation :
Colour: dark garnet.
Nose: an explosion of aromas, featuring prune and other stonefruits (morello, plum), vanilla and mocha.
Palate: the attack is ample and harmonious, the tannins are coming out, they are powerful and are the sign of a wine that will keep very long.
The Saint-Valentin vintage is one of the Lirac appellation’s prime wines.
Accords mets/vins :
Lamb, game, rib steak in wine sauce. Serving temperature 17°C.
