We endeavour at each stage in the making of our wines to use as little chemistry as possible: in the vineyards through our sustainable-pest-control group, at the cellar through our programme for the reduced use of œnological products.
We are now using only half the sulphur we used to, we are using as little cultured yeast as possible, and we no longer use wine filtering earths.
And in 2011 we produced our first vintage made from organically grown grapes. Some of our vintners are taking this path, and we should be increasing the volume of our organically-grown wines in the coming years. We would then be offering you a full range of organic wines.
